Pesto and White Bean Soup

Soups are amazing - with so many different combinations of flavours, ingredients and ideas they are really perfect for lunch or as a main meal. Keeping you fuller for longer, there’s nothing quite like a hearty soup to keep you warm.


  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 tbsp Italian seasoning
  • 1/4 tsp Red Pepper flakes
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1 can diced Tomatoes
  • 2 cans White Beans, rinsed and drained
  • 6 cups Vegetable Stock
  • Juice of 1 Lemon
  • 1 cup cooked Brown Rice
  • 1/2 cup Pesto


  1. Add all of the ingredients, except for Pesto and Rice into a slow cooker.
  2. Turn the cooker onto low and cook for 8 hours (alternatively on high for 4 hours)
  3. Once ready to eat, stir the rice and the pesto into the soup and serve.
