
Soups are amazing - with so many different combinations of flavours, ingredients and ideas they are really perfect for lunch or as a main meal. Keeping you fuller for longer, there’s nothing quite like a hearty soup to keep you warm.
Ingredients
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 tbsp Italian seasoning
- 1/4 tsp Red Pepper flakes
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1 can diced Tomatoes
- 2 cans White Beans, rinsed and drained
- 6 cups Vegetable Stock
- Juice of 1 Lemon
- 1 cup cooked Brown Rice
- 1/2 cup Pesto
Method
- Add all of the ingredients, except for Pesto and Rice into a slow cooker.
- Turn the cooker onto low and cook for 8 hours (alternatively on high for 4 hours)
- Once ready to eat, stir the rice and the pesto into the soup and serve.
