For many of us, it can be difficult to choose what to eat for lunch, especially for those who are at work or away from home during the day. Why not try this scrumptious salad idea . . .


  • 2 tbsp of cooked Brown Rice with Tofu
  • 1 chopped Little Gem Lettuce
  • A handful of halved Cherry Tomatoes
  • Half a Fennel Bulb, chopped and thinly sliced
  • A handful of chopped Watercress
  • 75g of Cucumber, sliced
  • A handful of Pumpkin and Sunflower seeds
  • A handful of Coriander
  • 1 tsp of olive oil
  • 1 tsp of balsamic vinegar
  • 1 tsp of ground Cumin


  1. Mix together the rice, lettuce, tomatoes, fennel, watercress and cucumber in a salad bowl
  2. Add in the coriander and seeds and stir in well
  3. Drizzle the olive oil and balsamic vinegar, sprinkly the cumin over the top to finish
  4. Enjoy!
