Toasted Pita Bread with Avocado-Watermelon and Mint Salad

  • Avocado - thinly sliced
  • 2 thin slices of watermelon for the pitas
  • Tiny handful of thin strips of watermelon for the salad
  • Handful of fine green beans chopped in half each (from frozen)
  • Small handful of mint , finely shredded
  • Juice of 1/4 lemon
  • 1/2 tablespoon olive oil
  • A couple of salad leaves or rocket leaves
  • 1 oven warmed pitta bread


  1. Start by making the salad. Combine the green beans, the strips of melon, half the mint and half the dressing – mixed together in a large bowl
  2. Heat the pita bread in the oven or toaster for a 2-4 minutes so it’s warm and almost crispy
  3. Cut open the pitas and place the melon and avocado slices into it along with a few salad leaves, coating lightly with the lemon and olive oil dressing
  4. Place the stuffed pita and then the green bean, melon and mint salad on a plate and serve
