Ingredients
- Avocado - thinly sliced
- 2 thin slices of watermelon for the pitas
- Tiny handful of thin strips of watermelon for the salad
- Handful of fine green beans chopped in half each (from frozen)
- Small handful of mint , finely shredded
- Juice of 1/4 lemon
- 1/2 tablespoon olive oil
- A couple of salad leaves or rocket leaves
- 1 oven warmed pitta bread
Method
- Start by making the salad. Combine the green beans, the strips of melon, half the mint and half the dressing – mixed together in a large bowl
- Heat the pita bread in the oven or toaster for a 2-4 minutes so it’s warm and almost crispy
- Cut open the pitas and place the melon and avocado slices into it along with a few salad leaves, coating lightly with the lemon and olive oil dressing
- Place the stuffed pita and then the green bean, melon and mint salad on a plate and serve
